Phenols content and antioxidant properties of blackberry pomace

Abstract
The Rubus genus includes several berry species and is the largest genus of the Rosaceae family. The species of this genus have been cultivated for centuries because of their fruits; however, there are only a few domesticated species of blackberries. Blackberries are consumed fresh or as processed products such as juice, leaving a lot of by-products. By-products are an important part of the food industry in the whole world, the largest portion consists of pomace. Blackberry pomace is an important source of many bioactive substances such as antioxidants (anthocyanins, polyphenols), dietary fiber, vitamin C, and vitamin E, along with the phenolic metabolites that are a source of possible health benefits. Blackberry pomace is an important source of many bioactive substances such as phenolic compounds, dietary fiber, vitamin C, carotenoids, vitamin E, etc. with possible health benefits for humans. The research was carried out at Vytautas Magnus University Agriculture Academy the Faculty of Agronomy in the department of Plant Biology and Food Sciences in 2023. The research aim was to analyze the antioxidant properties of different varieties of blackberry pomace as well as the total phenolic compounds, including anthocyanins and polyphenols. The pomace of the most popular varieties of blackberries in Lithuania ‘Polar‘, ‘Brzezina‘, and ‘Orkana‘ were analyzed. The blackberries were obtained from a farmer in the Vilnius region and juice was squeezed. The pomace was freeze-dried in a lyophilization at -55 oC degrees, for 48 hours. Freeze-dried blackberries pomace was ground to a flour consistency (using a 0.2 mm particle size sieve) and kept in hermetic bags at freezer -38C degrees till the analyses. Blackberry pomace flour was analysed according to the international standards for dry matter (International Organization for Standardization, 1998) and expressed as the mass percentage. Total phenolic content was determined using the Folin-Ciocalteu method, total anthocyanin content was determined using a pH differential method, total flavonoid content was determined using quercetin as a standart, the radical scavenging capacity (RSC) determined using a DPPH spectrophotometric assay method. The research data indicate that the highest amount of dry matter, total phenolic and monomeric anthocyanins content was found in ‘Orkana’ blackberry pomace respectively 97.77 %, 327.53 mg100g and 129.58 mg100g, the highest amount of total flavonoid and antioxidant activity was found in ‘Polar’ blackberry pomace respectively 154.66 mg 100 g and 91.31 %.
