Review of coffee bean processing technologies

Coffee is one of the most widely consumed beverages in the world and constitutes an important raw material in the food industry. Its quality and sensory properties depend on many stages of the technological process, beginning on the plantation and ending with the preparation of the beverage. This process is multi-stage and individual processing steps can be carried out using different methods and technological solutions. Their selection depends, among others, on production conditions, available equipment and the desired final effect. The process includes harvesting of coffee cherries, post-harvest processing, drying, hulling, sorting, storage, roasting, grinding and brewing. Individual operations may occur in different sequences, with not all of them present in every processing method. The applied technologies influence the final physical and quality characteristics. Differences in the course of individual stages may lead to a product with different sensory and functional properties, which highlights the importance of conscious selection of processing methods. The aim of this study is to provide a review of coffee bean processing technologies and their impact on the quality of the final coffee beverage. Based on a literature review, this work highlights the importance of individual coffee bean processing stages in achieving the desired quality attributes of the final product.
