Comparison of the nutritional value and aminogram of selected unconventional proteins

Abstract

Unconventional protein sources have been a popular topic of scientific papers in recent years. Interest in them is growing as studies show that alternatives to meat and dairy products should be sought for environmental, economic and health reasons. FAO reports suggest that alternative proteins can significantly lower the cost of food production and reduce the consumption of natural resources. The purpose of this study was to present a comparison of the nutritional composition and amino acid profile of selected alternative protein sources such as edible insects, Single Cell Protein, Spirulina, potato protein. Among other things, the caloric value, protein, fat, carbohydrate, fiber and ash contents were examined. The content of endogenous and exogenous amino acids was also tested. The results were compared among themselves, but also in relation to whey protein as a benchmark particularly often used in high-protein products. The amino acid profile was compared with the FAO/WHO/UNU standard and the aminogram of whey protein. The results obtained suggest great application potential of the presented protein sources for food, including functional foods. Each of the protein sources studied may have applications in different types of products depending on the function of the product.
