Probiotic properties and potential of yeasts isolated from variety of food and beverages

Abstract
The use of probiotic yeast has gained increasing attention in recent years because of their potential for health benefits. These yeasts have been shown to have plenty of beneficial effects on human and animal health, such as the gut’s microbiota modulation, improvement of immune system, furthermore also prevention and treatment for certain diseases. We focus on the probiotic properties and potential of yeasts isolated from a variety of food and beverages. We discuss the different sources of yeast isolation including traditional foods, beverages and fermented food. In the work, we focus on distribution of diverse yeasts in different types of beverages and foods which may help in selection of potential source of isolates with high quality and functionality for further research, including yeasts genera such as Candida, Debaryomycetes, Kluyveromyces, Metschnikowia, Pichia, Saccharomyces, Torulaspora, Wickerhamomyces and Yarrowia. Moreover, we also discuss the potential applications of probiotic yeasts in different fields, including the food, animal and pharmaceutical industries. We review the current knowledge of the health benefits of probiotic yeasts and their potential use in the prevention and treatment of various diseases such as gastrointestinal disorders, acute diarrhea, metabolic disorders, and allergic diseases. We conclude that the use of probiotic yeasts has great potential for improvement on both human and animal health however further research will be needed to fully understand their mechanisms of action and to fully predict and optimize their use in various applications.
