Attitudes of Polish consumers toward game meat

Abstract
Game meat is not literally an ecological raw material. Still, it has a low carbon footprint, and its production is included in the price of the functioning of the environment. However, the consumption of game meat in Poland is 0.08 kg/person/year. Most of the meat obtained is exported (50,000 tonnes/year) to neighboring countries. Meat is transported frozen, which reduces its quality and increases its carbon footprint. Despite the high export level, game is also imported to Poland (30,000 tonnes/year). Therefore, it is necessary to rationalize the actions taken so as not to overburden the environment. The work aimed to develop a validated tool for measuring Polish consumers’ attitudes towards game meat and to use it in practice. Based on a critical literature analysis, a questionnaire was developed to study the respondents’ attitudes. Then, using the CAWI method, research was conducted on 3,620 respondents. The obtained results allowed for the validation of the questionnaire using the PCA method. After positive questionnaire validation, the differences between the groups were determined using the chi2 test. The obtained results found that the developed questionnaire for researching consumer attitudes towards game meat is an effective and reliable tool. In addition, statistically significant differences between groups conditioned by sociodemographic characteristics were detected. Men view wild animal meat more positively than women. Older respondents perceived game meat more positively than younger people. People with higher education perceived game meat more positively regarding the risks and benefits of its consumption. The use of a meat-free diet has a statistically significant impact on the respondents’ negative perception of wild animal meat.
